Lemon Garlic Baked Chicken

Family dinners are easier than ever!

This lemon garlic baked chicken is an easy weeknight meal that your whole family will love! One pan meals make cooking and cleaning up during the week even easier. This recipe is packed with flavor, but also minimal ingredients. Even my picky teenager cleaned his plate with this recipe. As you read this post, you will see how simple this meal will come together and become part of your families weekly rotation!

Tender & juicy chicken baked to perfection in a garlic & vinaigrette sauce with a splash of lemon! You will be scraping the pan for the juice to drizzle over your baked chicken. Serve it with your favorite sides and you’ve got a simple dinner ready for the family in under an hour!

Step by step guide:

  1. Trim & season chicken. You can either use chicken breasts, thighs or drumsticks. (I used chicken breast because this is what I had in the freezer.) Once trimmed, I coat with Brianna’s Garlic Vinaigrette dressing, Slap Ya Mama’s seasoning, Paprika, and Garlic & Herb seasoning. You will toss around until all of the chicken is coated. Squeeze in the juice of half a lemon and mix once again. Once your chicken is fully coated, place in the fridge to marinate for about an hour.
  2. Preheat oven to 425
  3. Once your oven is preheated, add your chicken to the baking dish. Cover the chicken with slices of lemon. (I took the seeds out, just so I didn’t have to worry about it once the chicken was cooked.) I top with a little bit more Garlic & Herb seasoning.
  4. Place chicken in the oven and baked for about 30-35 minutes or until internal temp reaches 165. If you have more chicken, then you may need to bake for a little longer.
  5. While the chicken is baking, I prepare my side dishes. For this meal, I served sweet peas and cucumber salad as our side.

Additional Notes:

You can add red potatoes to the baking dish with the chicken. Just note that you may have to cook them longer to ensure the potatoes are cooked.

This can be served by itself or over cooked rice.

Ingredients:

2 pounds of chicken breast

1/2 of bottle Brianna’s garlic vinaigrette dressing

Cajun seasoning (I prefer Slap Ya Mama’s)

Paprika

Garlic & Herb seasoning

Juice from half squeezed lemon or 1 tablespoon of lemon concentrate
